Ingredients list for Malwani Prawns
- ½ cup Prawns (medium) shelled and deveined with tails intact
- ½ cup Scraped coconut
- ½ teaspoon Turmeric powder
- to taste Salt
- 2 tablespoons Oil
- 1 teaspoon Coriander seeds
- 3-4 Dried red chillies
- 1 medium Onion finely chopped
- 1 teaspoon Malwani masala
- 1 teaspoon Rice
- 1 tablespoon Garlic chopped
- ½ cup Coconut milk
- 3-4 Kokum petals
- to garnish Dried red chilli 1 fried
Method
- Put prawns in a bowl, add turmeric powder and salt, mix and set aside to marinate.
- Heat 1 tablespoon oil in a shallow non-stick pan. Add coriander seeds and sauté till fragrant.
- Break red chillies and add to the pan and sauté for a minute. Add half the onion and sauté till golden.
- Add coconut, mix and roast for 30 seconds. Switch off heat and add rice.
- Grind this mixture with some water to a fine paste.
- Heat remaining oil in another non-stick pan. Add remaining onion and sauté on high heat till golden.
- Add garlic and sauté till golden. Add ground paste, mix and cook for a minute.
- Add marinated prawns, mix and cook for a minute. Reduce heat, add Malwani masala and mix well. Add some water, mix and cook on low heat for 5 minutes.
- Add coconut milk and mix well. Add kokum petals, mix and cook on low heat for 2-3 minutes.
- Serve hot garnished with a fried dried red chilli.
