Macaroni and Cheese with Sausages

Ingredients 

  • 200 grams macaroni
  • 1 cup grated cheddar cheese 
  • 6 chicken sausages
  • 3 tablespoons butter
  • 2 tablespoons refined flour (maida)
  • 2 cups milk
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 1 teaspoon garlic, finely chopped
  • Crushed black peppercorns to taste
  • 1 1/2 cups fresh cream, whipped
  • A pinch of nutmeg powder

Method

  1. Preheat oven to 180° C. To make white sauce, melt 2 tbsps butter in a non stick pan, add refined flour and cook, stirring continuously.
  2. Slowly add milk and whisk continuously to avoid lumps.
  3. Turn off the heat and add cheddar cheese and whisk some more.
  4. Halve the chicken sausages slit the edges. Heat olive oil and 1 tbsp butter in another non stick pan.
  5. Add onion and sauté for a minute. Add garlic and sauté till translucent.
  6. Add crushed black peppercorns and mix well. Add chicken sausages and sauté on a high heat.
  7. Add whipped cream to the white sauce and mix well. Add nutmeg powder and mix.
  8. Add macaroni to the chicken sausages and mix well. Pour the white sauce over the macaroni and mix.
  9. Transfer this mixture into a baking dish.
  10. Bake in the preheated oven for 12-15 minutes. Serve hot.
