Lauki Tamatar

Bottle gourd when cooked with tomatoes, ginger, fresh mint leaves and spices this way, becomes very tasty. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 medium bottle gourd (lauki/doodhi) peeled, seeded cut into ½ inch cubes
  • 2 medium tomatoes, chopped
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • ¼ teaspoon asafoetida
  • 1 inch ginger, finely chopped
  • ¼ teaspoon turmeric powder
  • ¾ teaspoon red chilli powder
  • Salt to taste
  • 15-20 fresh mint leaves,chopped

Method

  1. Heat oil in a non-stick pan, add cumin seeds and saute till they turn golden.
  2. Add asafoetida and ginger and saute till ginger is golden.
  3. Add bottle gourd and mix well. Add turmeric powder, red chilli powder and salt and mix well. Cover and cook for 4-5 minutes.
  4. Add tomatoes and sugar and mix well. Add half the mint leaves and cook till tomatoes turn pulpy.
  5. Transfer into a serving bowl, garnish with the remaining mint leaves and serve hot.
