Ingredients list for Konkani Prawn Curry-SK Khazana
- 20-24 Medium prawns shelled and deveined
- to taste Salt
- 1/4 teaspoon Turmeric powder
- 3 tablespoons Coconut oil
- 1 tablespoon Coriander seeds
- 10-12 Black peppercorns
- 6-8 Dried red chillies
- 1 tablespoon Chopped onion
- 1 teaspoon Rice
- 1/2 cup Fresh coconut scraped
- 1 Medium onion finely chopped
- 1 Medium raw mango peeled and cut into wedges
- 1/2 tablespoon Tamarind pulp
- for garnish Fresh coriander sprig
Method
- Put prawns in a bowl. Add salt and turmeric powder, mix well and set aside to marinate for 15-20 minutes.
- Heat 1 tablespoon coconut oil in a non-stick pan. Add coriander seeds, peppercorns and red chillies, mix and sauté till fragrant.
- Blend together 1 tablespoon chopped onions, rice, coconut and roasted spices with sufficient water to a smooth paste.
- Heat remaining coconut oil in a deep- non-stick pan. Add onion and sauté till lightly browned.
- Add marinated prawns and mango, mix well and cook for 2-3 minutes. Add prepared paste, mix well and cook for 2-3 minutes.
- Add sufficient water and mix. Add tamarind pulp and salt, mix well, cover and cook till fully done.
- Garnish with coriander sprig and serve hot with red rice.
