Coastal cuisine of India loves the coconut. Be it Goan or Malwani, Karnatak, Tamilian or from Kerala, the taste of coconut reigns supreme. Think about a rich fish curry and try making it obliterating the coconut! It will pass off as a fake. Very correctly termed as the ‘plant of life,’ each and every part of the coconut plant is useful in one or the other way.

Ingredients for Kokum aur Nariyal ka Pulao Recipe

  • Scraped Coconut soaked 2 cups

  • Kokum Petals 1 cup

  • Kokum petals 6-7

  • Ghee 1 tablespoon

  • Mustard seeds 1/2 teaspoon

  • Cumin seeds 1 teaspoon

  • Cashewnuts 15-17

  • Carrot cut into small cubes 1 medium

  • Curry leaves 10-15

  • Dried red chillies 2-3

  • Green peas 1/2 cup

  • Salt to taste

  • Mint for garnis a few

Method

Step 1

Adjust the rice cooker on cooking mode. Heat ghee in the rice cooker, add mustard seeds, cumin seeds and cashewnuts and sauté till fragrant.

Step 2

Add carrot, curry leaves, dried red chillies and sauté for 2-3 minutes. Add rice, coconut, kokum petals, green peas, salt and 3¾ cup water.

Step 3

Mix well and cook for 15-18 minutes or till done. Transfer onto a serving plate, garnish with mint sprig and serve hot.
