Ingredients list for Khowsuey - SK Khazana

  • 2 tablespoons Babycorns sliced
  • 2 tablespoons Green zucchini chopped
  • 2 tablespoons Broccoli florets
  • 2 tablespoons Carrot chopped
  • 2 tablespoons Gram flour (besan)
  • 1 cup Coconut milk
  • 1 teaspoon Green chilli paste
  • to taste Salt
  • to serve Noodles boiled
  • for garnish Spring onion greens chopped
  • for garnish Spring onion bulbs chopped
  • for garnish Fried onions
  • for garnish Fried noodles
  • for garnish Roasted peanuts
  • for garnish Fried garlic
  • for garnish Red chilli flakes
  • for garnish Black pepper powder
  • for garnish Lemon juice

Method

  1. Heat a deep non-stick pan, add gram flour and roast it on medium heat, stirring continuously, till raw smell disappears and the colour changes to light brown.
  2. Switch off heat and transfer the gram flour into a blender jar. Add coconut milk, a little water, green chilli paste and salt and blend to a fine mixture.
  3. Heat another deep non-stick pan, add blended mixture and ½ cup water and mix well. . Let it come to a boil on low heat, stirring occasionally.
  4. Add sliced baby corns, green zucchini, broccoli and carrot,mix well and let it cook for 4-5 minutes.
  5. Put some of this gravy into each serving bowl, add some noodles, spring onion greens and bulbs, fried sliced onion, , some fried noodles, peanuts, fried garlic slices, red chilli flakes, black pepper powder and some lemon juice and serve hot.
