Ingredients
- 2 tablespoons sliced babycorns
- 2 tablespoons chopped green zucchini
- 2 tablespoons broccoli florets
- 2 tablespoons chopped carrot
- 2 tablespoons gram flour (besan)
- 1 cup coconut milk
- 1 teaspoon green chilli paste
- Salt to taste
- Boiled noodles to serve
- Chopped spring onion greens for garnish
- Chopped spring onion bulbsfor garnish
- Fried onions for garnish
- Fried noodles for garnish
- Roasted peanuts for garnish
- Fried garlic for garnish
- Red chilli flakes for garnish
- Black pepper powder for garnish
- Lemon juice to drizzle
Method
- Heat a deep non-stick pan, add gram flour and roast it on medium heat, stirring continuously, till raw smell disappears and the colour changes to light brown.
- Switch off heat and transfer the gram flour into a blender jar. Add coconut milk, a little water, green chilli paste and salt and blend to a fine mixture.
- Heat another deep non-stick pan, add blended mixture and ½ cup water and mix well. . Let it come to a boil on low heat, stirring occasionally.
- Add sliced baby corns, green zucchini, broccoli and carrot,mix well and let it cook for 4-5 minutes.
- Put some of this gravy into each serving bowl, add some noodles, spring onion greens and bulbs, fried sliced onion, , some fried noodles, peanuts, fried garlic slices, red chilli flakes, black pepper powder and some lemon juice and serve hot.
