Kebab Omelette

A creative fusion dish featuring a fluffy omelette wrapped around spiced seekh kebabs, layered with bread slices, and cooked to a golden, crispy perfection, served hot with tomato ketchup. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 8 eggs
  • 8 chicken seekh kebabs
  • Salt to taste
  • Crushed black peppercorns to taste
  • 1 teaspoon chaat masala
  • 2 green chillies chopped
  • 2 medium onions chopped
  • 2 medium tomatoes chopped
  • 4 tablespoons fresh coriander leaves chopped
  • 4 tablespoons butter
  • 2 teaspoons oil
  • 8 white bread slices
  • Tomato ketchup to serve

Method

  1. Break 4 eggs into a bowl, add salt, crushed black peppercorns, ½ tsp chaat masala, half the green chillies, half the onion, half the tomatoes and the coriander leaves and whisk well with a fork.
  2. Heat 1 tsp butter along with a little oil in a tawa, pour the egg mixture and let it spread evenly.
  3. Place 2 bread slices over the eggs and let them soak some of the egg mixture from both sides. Remove these bread slices and place 2 more slices and let them soak some of the egg mixture.
  4. Flip the omelette, place 4 seekh kebab in the centre and fold the omelette over from both sides and cook till the base is cooked completely.
  5. Flip the entire omelette. Place 4 seekh kebabs in the middle and fold both the sides of the omelette over them.
  6. Place the 1st 2 slices over the folded omelette and press lightly. Flip and cook for 1-2 minutes. Similarly make more sandwiches with the remaining ingredients in the same way.
  7. Divide each sandwich into 2 triangles. Arrange them on a serving platter and serve hot with tomato ketchup.
