Ingredients
- 8 eggs
- 8 chicken seekh kebabs
- Salt to taste
- Crushed black peppercorns to taste
- 1 teaspoon chaat masala
- 2 green chillies chopped
- 2 medium onions chopped
- 2 medium tomatoes chopped
- 4 tablespoons fresh coriander leaves chopped
- 4 tablespoons butter
- 2 teaspoons oil
- 8 white bread slices
- Tomato ketchup to serve
Method
- Break 4 eggs into a bowl, add salt, crushed black peppercorns, ½ tsp chaat masala, half the green chillies, half the onion, half the tomatoes and the coriander leaves and whisk well with a fork.
- Heat 1 tsp butter along with a little oil in a tawa, pour the egg mixture and let it spread evenly.
- Place 2 bread slices over the eggs and let them soak some of the egg mixture from both sides. Remove these bread slices and place 2 more slices and let them soak some of the egg mixture.
- Flip the omelette, place 4 seekh kebab in the centre and fold the omelette over from both sides and cook till the base is cooked completely.
- Flip the entire omelette. Place 4 seekh kebabs in the middle and fold both the sides of the omelette over them.
- Place the 1st 2 slices over the folded omelette and press lightly. Flip and cook for 1-2 minutes. Similarly make more sandwiches with the remaining ingredients in the same way.
- Divide each sandwich into 2 triangles. Arrange them on a serving platter and serve hot with tomato ketchup.
