Ingredients list for Karela Aur Aam Papad Ki Subzi

  • 8 Bitter gourd peeled and cut into 1 inch pieces
  • 50 grams Black aam papad cut into small pieces
  • 50 grams Red aam papad cut into small pieces
  • to taste Salt
  • 1/2 teaspoon Turmeric powder
  • 2 tablespoons Oil
  • 1 teaspoon Cumin seeds
  • 3 Green chillies roughly chopped
  • 1 Onion roughly chopped
  • 1 teaspoon Coriander powder
  • 1/2 teaspoon Red chilli powder
  • 1/2 teaspoon Dry mango powder (amchur)
  • 1 teaspoon Tamarind paste
  • 1 teaspoon Jaggery (gur) grated
  • 1 teaspoon Fresh coriander leaves chopped

Method

  1. Scrape karelas and thinly slice them.
  2. Add salt and ¼ tsp turmeric powder, mix and set aside for ½ an hour. Heat oil in a non-stick pan and add cumin seeds, green chillies, onion and sauté till fragrant.
  3. Add karelas and sauté for 3-4 minutes. Cut both the aam papads into small pieces.
  4. Add coriander powder, red chilli powder, remaining turmeric powder, dried mango powder, salt and mix well. Cook till karelas are done.
  5. Add aam papad, tamarind paste, jaggery, coriander leaves and mix. Serve hot.
