Indian Masala Omelette

Starting your day with this spicy masala omelet with ensure you have a good one. A flavourful onion tomato masala mixed with beaten eggs and some cheese and cooked to perfection. Serve hot with slices of toasted bread. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Indian Masala Omelette

  • 3 Eggs
  • 2 tablespoons Oil
  • 2-3 Green chillies chopped
  • 2 medium Tomatoes finely chopped
  • 1 teaspoon Red chilli powder
  • 1/4 teaspoon Turmeric powder
  • 1/2 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • to taste Salt
  • 1/2 teaspoon Sugar
  • 1/4 Capsicum chopped
  • 2 tablespoons coriander leaves chopped
  • 2 tablespoons Processed cheese grated
  • 1 medium Onion chopped


  1. Heat one tablespoon oil in a non-stick pan. Add green chillies sauté and add onions. Sauté till golden brown.
  2. Add tomatoes, sauté for two minutes on high heat.
  3. Add rec chilli powder, turmeric powder, cumin powder, coriander powder and stir well.
  4. Add salt and mix well. Sprinkle some water and mix well.
  5. Add sugar and capsicum and mix well.
  6. Switch off heat and allow it to cool.
  7. Break the eggs in a bowl. Add little salt and beat well.
  8. Add the prepared mixture to the eggs and mix well.
  9. Add coriander and mix well. Add cheese and mix.
  10. Heat remaining oil in a nonstick pan. Pour the mixture and spread evenly.
  11. Lower the heat. Cover and cook for two to three minutes or till eggs are cooked.
  12. Remove in a serving plate and serve hot with toasted bread.
