By Sanjeev Kapoor 23 Jan 2019 in Recipes Course New Update Main Ingredients Eggs, Medium potatoes Cuisine Bengali Course Snacks and Starters Prep Time 41-50 minutes Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Non Veg Ingredients list for Healthy Dimer Chop - SK Khazana 4 Eggs hard boiled, cooled and peeled 4 Medium potatoes boiled, peeled and mashed 1 tablespo Oil 1/2 teaspoon Mustard seeds 1 Green chilli finely chopped 1 Medium onion finely chopped 1/2 teaspoon Red chilli powder 1/4 teaspoon Turmeric powder 1 teaspoon Garam masala powder 1/2 teaspoon Cumin powder 1/2 teaspoon Coriander powder to taste Salt 1 tablespoon Fresh coriander leaves finely chopped 2 Eggs for coating Dried breadcrumbs Method Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add green chilli and onion, mix and sauté till onions turn translucent. Add chilli powder, turmeric powder, garam masala powder, cumin powder and coriander powder, mix well and saute for 1-2 minutes. Add 1 tbsp water and mix. Add potatoes and salt and mix well and cook for 1 minute. Add coriander leaves and mix well. Remove from heat and set aside to cool. Break two eggs, separate the yolks from the whites and keep in two separate bowls. Add 2 tbsps water and salt to the egg whites and beat well. Pre-heat air-fryer at 180º C. Take breadcrumbs in another bowl. Divide the potato mixture into 4 equal portions. Spread each portion in your palm, keep an egg in the centre and wrap the potato mixture around it so that it is completely covered. Dip the eggs in egg white and roll in breadcrumbs so that they are completely covered. Place chops in the air-fryer basket, brush some oil over the eggs, fit the basket into the air-fryer. Increase the temperature to 200º C and cook for 20 minutes. Or till golden brown and crisp on the outside.
