Ingredients list for Healthy Dimer Chop - SK Khazana
- 4 Eggs hard boiled, cooled and peeled
- 4 Medium potatoes boiled, peeled and mashed
- 1 tablespo Oil
- 1/2 teaspoon Mustard seeds
- 1 Green chilli finely chopped
- 1 Medium onion finely chopped
- 1/2 teaspoon Red chilli powder
- 1/4 teaspoon Turmeric powder
- 1 teaspoon Garam masala powder
- 1/2 teaspoon Cumin powder
- 1/2 teaspoon Coriander powder
- to taste Salt
- 1 tablespoon Fresh coriander leaves finely chopped
- 2 Eggs
- for coating Dried breadcrumbs
Method
- Heat oil in a non-stick pan, add mustard seeds and let them splutter.
- Add green chilli and onion, mix and sauté till onions turn translucent. Add chilli powder, turmeric powder, garam masala powder, cumin powder and coriander powder, mix well and saute for 1-2 minutes.
- Add 1 tbsp water and mix. Add potatoes and salt and mix well and cook for 1 minute.
- Add coriander leaves and mix well. Remove from heat and set aside to cool.
- Break two eggs, separate the yolks from the whites and keep in two separate bowls. Add 2 tbsps water and salt to the egg whites and beat well.
- Pre-heat air-fryer at 180º C. Take breadcrumbs in another bowl.
- Divide the potato mixture into 4 equal portions. Spread each portion in your palm, keep an egg in the centre and wrap the potato mixture around it so that it is completely covered.
- Dip the eggs in egg white and roll in breadcrumbs so that they are completely covered.
- Place chops in the air-fryer basket, brush some oil over the eggs, fit the basket into the air-fryer. Increase the temperature to 200º C and cook for 20 minutes. Or till golden brown and crisp on the outside.
- Transfer them onto a serving plate, halve them vertically and serve hot.
