Ingredients list for Hare Tamatar ki Sabzi
- 8 medium Green Tomatoes
- for garnishing Garlic Sev
- 2 tablespoons Oil
- 1 teaspoon Cumin seeds
- 1 tablespoon Ginger finely chopped
- 2 Green chillies finely chopped
- 8-10 Garlic cloves finely chopped
- 1 teaspoon Red chilli powder
- 1 tablespoon Cumin powder
- 1 tablespoon Coriander powder
- 1/2 teaspoon Garam masala powder
- 1 teaspoon Dried mango powder (amchur)
- to taste Salt
- 130 grams Bhuna masala
- 1 tablespoon Fresh coriander leaves finely chopped
Method
- Roughly chop tomatoes and grind into a purée.
- Heat oil in a non-stick pan, add cumin seeds and sauté till fragrant. Add ginger, green chillies and garlic and sauté till garlic becomes a light golden.
- Add tomato purée and sauté for 6-8 minutes. Add red chilli powder, cumin powder, coriander powder, garam masala powder, dried mango powder and salt and sauté for 2-3 minutes
- Add bhuna masala and saute for 1-2 minutes. Add coriander leaves and mix well.
- Transfer into a serving bowl, garnish with garlic sev and serve hot.
