Ingredients list for Gosht Kofta Curry

  • 600 grams Boneless Mutton 1 1/2 inch cubes
  • 1 cup Yogurt
  • to taste Salt
  • 2 teaspoons Ginger paste
  • 2 teaspoons Garlic paste
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Green cardamom powder
  • 4 tablespoons Oil
  • 2 Green cardamoms
  • 3 Cloves
  • 1/2 inch stick Cinnamon
  • 5 Black peppercorns
  • 1 Bay leaf
  • 4 medium Onions sliced
  • 2 Green chillies chopped
  • 1 tablespoon Coriander powder
  • 1/2 cup Tomato puree

Method

  1. Mix lamb mince, lamb fat and half the green chillies. Pass through a mincer.
  2. Divide into twelve equal portions and shape them into dumplings (koftas). Refrigerate for half an hour. Heat oil in a thick bottomed pan. Add cloves, green cardamoms, black cardamoms, cinnamon and sauté for two to three minutes.
  3. Add onions and remaining green chillies, sauté until onions are golden brown. Stir continuously. Add ginger paste, garlic paste, coriander powder, turmeric powder and red chilli powder.
  4. Cook for thirty seconds. Add tomato puree and cook till fat leaves the masala. Add three cups of water, salt and garam masala powder.

  5. Bring it to a boil and then add koftas. Reduce heat and cook for about ten to fifteen minutes or till koftas are tender. Serve hot garnished with coriander leaves.
