Ingredients list for Fried Fish in Banana Leaves
- 2 Pomfret fillets
- 1-2 Banana leaves
- 1 teaspoon Cumin seeds
- 1 cup Fresh coconut scraped
- 2-3 Green chillies
- 1/2 cup Fresh coriander leaves chopped
- 2 tablespoons Fresh mint leaves chopped
- 4-5 Garlic cloves
- 1/2 medium Raw mango peeled and roughly chopped
- to taste Salt
- 1/2 teaspoon Turmeric powder
- 1 tablespoon Lemon juice
- for shallow frying Oil
Method
- Dry roast the cumin seeds till fragrant. Remove from heat and transfer in a grinder jar.
- Add the coconut, green chillies, coriander leaves, mint leaves, garlic, raw mango, salt and turmeric powder and grind to a smooth paste.
- Transfer in a bowl, add the lemon juice and mix well. Add the fish and coat well.
- Cut the banana leaves into small portions and place the fish fillet in each portion. Wrap like a parcel and tie with a kitchen string.
- Heat some oil in a non-stick pan. Place the parcels on it and shallow-fry for five minutes on each or till the fish is cooked.
- Unwrap and serve hot.
