Ingredients
- 300 grams French beans, finely chopped
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 8-10 curry leaves
- 2 green chillies, chopped
- 1 large onion, chopped
- Salt to taste
- A small pinch of soda bicarbonateaaa
- 2 tablespoons roasted peanuts, crushed
- 1 tablespoon lemon juice
- 1/2 cup scraped fresh coconut
Method
- Take a microwave proof bowl. Pour oil into it, add mustard seeds, curry leaves and green chillies and mix well.
- Keep it in the microwave and cook on HIGH for two minutes.
- Add onion and mix well and cook in the microwave on HIGH for two minutes.
- Add beans and mix. Add salt and a pinch of soda bicarbonate and mix well.
- Add crushed peanuts, sprinkle a little water. Cook in the microwave on HIGH for four minutes.
- If the beans are not cooked, sprinkle a little more water and cook again on HIGH for two more minutes.
- Sprinkle lemon juice, garnish with coconut and serve hot.
