Doodhi Bhopla Bhaji

Doodhi sabzi does not sound very exciting, but make it this way and watch it being gobbled up. Serve this with hot phulkas. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 medium bottle gourd (lauki/doodhi), peeled and cut into cubes
  • ½ cup scraped fresh coconut 
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • ¼ teaspoon fenugreek seeds (methi dana)
  • 1-2 green chillies, chopped
  • A pinch of asafoetida
  • 1 medium onion, finely chopped
  • Salt to taste
  • 1 teaspoon sugar
  • Crushed black peppercorns to taste

Method

  1. Heat oil in a non-stick pan, add mustard seeds and fenugreek seeds and let them splutter.
  2. Add green chillies, asafoetida and bottle gourd and mix well. Add onion and sauté for a minute.
  3. Add some water, mix, cover and cook on low heat for 5 minutes.
  4. Add salt and little water, mix, cover and cook for 2 minutes. Add sugar, crushed peppercorns, coconut and some water, mix, cover and cook for a minute.
  5. Serve hot.
