Ingredients list for Crackling Spinach Chicken-SK Khazana
- 400 grams Boneless chicken legs cut into 1/2 inchSpin pieces
 - 2 cups Spinach shredded
 - to taste Salt
 - to taste White pepper powder
 - 1 tablespo teaspoon Soy sauce
 - 3 1/2 teaspoons Garlic chopped
 - 1 1/2 teaspoons Red chilli flakes
 - 1 tablespoon Cornflour
 - to deep fry Oil
 - 1 tablespo teaspoon Sesame oil
 - 1 teaspoon Ginger chopped
 - 1 teaspoon Celery chopped
 - 1 Dried red chilli
 - 1 teaspoon Sugar
 - 1 Medium onion quartered and layers separated
 - 2 teaspoons Cornflour slurry
 - 1/2 tablespoon Fresh coriander leaves chopped
 - 1.2 tablespoon Spring onion greens chopped
 
Method
- Put chicken pieces in a bowl. Add salt, pepper powder, 1 tablespoon soy sauce, 1 teaspoon garlic, 1 teaspoon chilli flakes and cornflour. Mix well and set aside for 10-15 minutes.
 - Heat sufficient oil in a kadai. Deep-fry spinach till crisp. Drain on absorbent paper.
 - Deep-fry chicken pieces in the same oil till crisp. Drain on absorbent paper.
 - Heat 1 tablespoon sesame oil in a non-stick pan. Add 1½ teaspoons garlic, ginger and celery, mix and sauté till fragrant.
 - Break and add red chilli along with 1 teaspoon soy sauce and mix well. Add ¼ cup water and stir.
 - Add salt, sugar, onion and cornflour slurry and mix. Add fried chicken and mix well.
 - Add coriander leaves and spring onion greens and mix well. Set aside.
 - Heat 1 teaspoon sesame oil in another non-stick pan. Add remaining garlic and sauté till lightly browned. Add remaining chilli flakes, fried spinach and salt and toss well.
 - Transfer the chicken onto a serving platter. Top with the crackling spinach and serve immediately.
