Corn Capsicum Masala

Corn Capsicum Masala

Ingredients 

  • 1 cup corn kernels, boiled
  • 2 medium green capsicums, cut into 3/4 inch squares
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 medium onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon red chilli powder
  • 1/4 teaspoon turmeric powder
  • 43 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1 cup tomato puree
  • 3/4 teaspoon garam masala powder
  • 1 tablespoon fresh cream
  • Salt to taste
  • Chopped fresh coriander leaves to garnish

Method

  1. Heat oil in a non-stick pan, add cumin seeds and onion, mix and sauté till onion is lightly browned.
  2. Add ginger-garlic paste, mix and sauté till fragrant.
  3. Add chilli powder and turmeric powder, mix and sauté for a minute. Add coriander powder and cumin powder, mix and sauté for a minute.
  4. Add tomato puree, mix and sauté till the oil separates. Add garam masala powder and mix well.
  5. Add green capsicum and mix well. Add corn kernels, mix well, cover and cook for 5-6 minutes.
  6. Add cream and mix. Add salt, mix well and cook for a minute.
  7. Garnish with coriander leaves and serve hot.
