Ingredients list for Chicken with Apricot

  • 600 grams Boneless Chicken curry cut pieces
  • 15-16 Dried Apricots
  • 2 tablespoons Oil
  • 3 Bay leaves
  • 2 inch sticks Cinnamon
  • 1 teaspoon Black peppercorns
  • 4 Black cardamoms
  • 4-5 Green cardamoms
  • 3-4 Cloves
  • 1 teaspoon Cumin seeds
  • 1 1/2 teaspoon Red chilli powder
  • a pinch Turmeric powder
  • to taste Salt
  • 130 grams Bhuna masala
  • 1 tablespoon Vinegar
  • for garnish Potato salli
  • For garnis a few sprigs Fresh mint (pudina)

Method

  1. Heat oil in a non-stick pan, add bay leaves, cinnamon, black peppercorns, black cardamoms, green cardamoms, cloves and cumin seeds and sauté till fragrant.
  2. Add chicken pieces, mix well and sauté for 3-4 minutes. Add red chilli powder, turmeric powder and salt and mix well.
  3. Add dried apricots, bhuna masala, vinegar and mix well. Add 3 cups water and mix well. Cover and cook for 10-12 minutes or till the chicken and apricots are cooked.
  4. Transfer into a serving bowl. Garnish with potato salli and a mint sprig and serve hot.
