Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chicken with Apricot Recipe

  • Boneless Chicken curry cut pieces 600 grams

  • Dried Apricots 15-16

  • Oil 2 tablespoons

  • Bay leaves 3

  • Cinnamon 2 inch sticks

  • Black peppercorns 1 teaspoon

  • Black cardamoms 4

  • Green cardamoms 4-5

  • Cloves 3-4

  • Cumin seeds 1 teaspoon

  • Red chilli powder 1 1/2 teaspoon

  • Turmeric powder a pinch

  • Salt to taste

  • Bhuna masala 130 grams

  • Vinegar 1 tablespoon

  • Potato salli for garnish

  • Fresh mint (pudina) For garnis a few sprigs

Method

Step 1

Heat oil in a non-stick pan, add bay leaves, cinnamon, black peppercorns, black cardamoms, green cardamoms, cloves and cumin seeds and sauté till fragrant.

Step 2

Add chicken pieces, mix well and sauté for 3-4 minutes. Add red chilli powder, turmeric powder and salt and mix well.

Step 3

Add dried apricots, bhuna masala, vinegar and mix well. Add 3 cups water and mix well. Cover and cook for 10-12 minutes or till the chicken and apricots are cooked.

Step 4

Transfer into a serving bowl. Garnish with potato salli and a mint sprig and serve hot.
