Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chicken Mince Salad Recipe

  • Boneless chicken breasts 2

  • Paprika powder 1 teaspoon

  • Salt to taste

  • Lemon juice 1 teaspoon

  • Oil 1 tablespoon

  • Cooked rice 1 cup

  • Tomato finely chopped 1 medium

  • Celery finely chopped 1 stalk

  • Green chilli finely chopped 1

  • Fresh mint leaves chopped 1 teaspoon

  • Sugar 1 teaspoon

  • Roasted peanuts crushed ¼ cup

Method

Step 1

Sprinkle salt, paprika powder and drizzle lemon juice over the chicken.

Step 2

Heat oil in a non-stick frill pan, place chicken and cook till the grill marks appear on both the sides. Cool.

Step 3

Roughly chop chicken. Transfer into a bowl.

Step 4

Add rice, tomatoes and mix well.

Step 5

Add celery, chillies, mint leaves and mix well.

Step 6

Add sugar, salt and pepper powder and mix well.

Step 7

Serve immediately garnished with peanuts
