Ingredients
- 2 boneless chicken breasts
- 2 tablespoons mayonnaise
- 2-3 bay leaves
- 5-7 black peppercorns
- 1-2 spring onions with greens finely chopped + for garnishing
- 1/2 medium onion, finely chopped
- 1/2 medium red bell pepper, finely chopped
- 1/2 medium green capsicum, finely chopped
- 1/4 cup corn kernels, boiled
- 3 tablespoons drained yogurt
- Crushed black peppercorns to taste
- Salt to taste
- 8 French bread slices
Method
- Heat sufficient water in a non-stick pan, add chicken, bay leaves and peppercorns and cook on medium-high heat for 14-15 minutes.Drain excess water.
- Roughly tear poached chicken and place in a bowl. Add spring onions with greens, onion, bell pepper, capsicum and corn kernels and mix well. Add mayonnaise and yogurt and mix well. Add crushed peppercorns and salt and mix well.
- Put some chicken mayo salad over each French bread slice.Serve garnished with spring onions with greens.
