Chayote Salad

A hearty and nutritious salad of sautéed chayote, creamy avocado, and black chana, spiced with Indian seasonings and finished with a splash of lemon and fresh coriander.

Ingredients 

  • 1 avacado, pulp removed
  • 1 chayote, vertically sliced
  • 1/2 cup black Bengal gram, boiled 
  • Salt to taste
  • 1 teaspoon oil
  • 1/2 cup chopped onion 
  • 1 small tomato, chopped
  • 1 green chilli, chopped
  • 1 teaspoon red chilli powder
  • 1/4 teaspoon cumin seeds
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon black salt (kala namak)
  • 1 teaspoon lemon juice
  • 1 tablespoon chopped coriander leaves

Method

  1. Heat oil in a non stick pan add chayote and salt and saute till it is tender.
  2. In a large bowl combine together chayote mixture, avocado, black chana, onions, tomatoes, green chillies, red chilli powder, cumin powder, turmeric powder, black salt, salt, lemon juice and mix well. Serve cold sprinkled with chopped coriander leaves.
