Ingredients
- 1 avocado
- 10-12 fresh basil leaves
- 3-4 garlic cloves
- Salt to taste
- 6-8 black peppercorns
- 2 tablespoons parmesan cheese powder
- 1 green chilli
- 1 tablespoon lemon juice
- 1 tablespoon pine nuts
- 2 tablespoons extra virgin olive oil + for drizzling
Method
- To make the dip, vertically halve the avocado, discard the seed and scoop out the flesh into a blender jar. Add basil leaves, garlic, salt, black peppercorns, parmesan cheese powder, green chilli, lemon juice, pine nuts and extra virgin olive oil and blend to a fine paste.
- Transfer the dip into a serving bowl, drizzle olive oil and serve as required.
