Ingredients list for Carrot Corn Fried Chilli
- 2 medium Rice boiled
- 400 grams Carrots
- 1 teaspoon Red chilli paste
- 3 cups Cooked rice
- 2 tablespoons Extra virgin olive oil
- 7-8 cloves Garlic
- 1 inch pie Ginger
- to taste Salt
- 1 teaspoon Sugar
- 2 teaspoons Light soy sauce
- 2 teaspoons Vinegar
Method
- Cut carrots into corn sized cubes.
- Heat extra virgin olive oil in a non stick pan. Crush garlic and add and sauté.
- Finely chop ginger. When the garlic gets a bit burnt, add ginger and sauté.
- Add carrot and mix. Drain corn and rinse in fresh water and add to the pan and mix well.
- Add red chilli paste and rice and mix well. Add salt, sugar, soy sauce and vinegar and mix.
- Cook till the rice gets heated through.
