Ingredients 

  • 250 grams ridge gourd (turai) 
  • 10 green chillies chopped
  • 4 garlic cloves
  • 2 tablespoons fresh coriander leaves chopped
  • 1 tablespoon tamarind pulp
  • Salt to taste
  • Tempering
  • 1 tablespoon oil
  • 1/4 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 3 dried red chillies broken
  • 6 curry leaves

Method

  1. Scrape the ridge gourds lightly. Chop roughly. Pound them along with the green chillies, garlic, coriander leaves or grind them coarsely in a blender.
  2. Add the tamarind pulp and salt and mix thoroughly. For tempering, heat oil in a pan, add the mustard seeds, cumin seeds, red chillies and curry leaves.
  3. When the mustard seeds splutter, add the tempering to the gourd mixture. Serve the chutney with rice drizzled with a little pure ghee.
