Ingredients
- 250 grams ridge gourd (turai)
- 10 green chillies chopped
- 4 garlic cloves
- 2 tablespoons fresh coriander leaves chopped
- 1 tablespoon tamarind pulp
- Salt to taste
- Tempering
- 1 tablespoon oil
- 1/4 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 3 dried red chillies broken
- 6 curry leaves
Method
- Scrape the ridge gourds lightly. Chop roughly. Pound them along with the green chillies, garlic, coriander leaves or grind them coarsely in a blender.
- Add the tamarind pulp and salt and mix thoroughly. For tempering, heat oil in a pan, add the mustard seeds, cumin seeds, red chillies and curry leaves.
- When the mustard seeds splutter, add the tempering to the gourd mixture. Serve the chutney with rice drizzled with a little pure ghee.
