You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Bhurji Pav - SK Khazana Recipe

  • Eggs 6

  • Pavs 8

  • Oil 2 tablespo teaspoons

  • Medium onions finely chopped 2

  • Green chillies finely chopped 2

  • Medium tomatoes finely chopped 2

  • Red chillies powder 1 1/2 teaspoons

  • Cumin powder 2 teaspoons

  • Coriander powder 2 teaspoons

  • Turmeric powder 1/2 teaspoon

  • Salt to taste

  • Milk 4 tablespoons

  • Fresh coriander leaves finely chopped 2 tablespo to garnish

  • Butter 2 tablespoons


Step 1

Heat 2 tablespoons oil in a non-stick pan, add onions and saute till translucent. Add green chillies and sauté till onions turn a light golden.

Step 2

Break eggs into a bowl and beat well.

Step 3

Add tomatoes to sautéed onions and sauté till soft. Add chilli powder, cumin powder, coriander powder, turmeric powder and salt and sauté till tomatoes become soft.

Step 4

Add milk to beaten eggs and beat well. Pour the egg mixture into the pan, mix continuously till they get scrambled and are done. Add coriander leaves and mix well.

Step 5

Heat butter and remaining oil in another non-stick pan.

Step 6

Slit the pavs keeping one side intact, place them in the pan, with cut side downwards, and toast turning sides till both sides are light golden brown.

Step 7

Transfer bhurji into a serving bowl, garnish with a coriander sprig and serve hot with toasted pavs.
