Ingredients list for Besan Omelette

  • 1 1/2 cups Gram flour (besan)
  • 6 cloves Garlic
  • 1/2 inch Ginger
  • 2 Green chillies
  • 1/2 teaspoon Cumin seeds , roasted
  • a few Fresh mint leaves
  • a few Fresh coriander leaves
  • 1/2 teaspoon Turmeric powder
  • to taste Salt
  • a pinch Asafoetida
  • 1 teaspoon Chaat masala
  • 1/4 teaspoon Carom seeds (ajwain)
  • to cook Oil
  • 100 grams Cottage cheese (paneer)
  • 100 grams Processed cheese

Method

  1. Take gram flour in a bowl. Put garlic, ginger, green chillies, roasted cumin seeds, mint leaves, coriander leaves and a little water in a grinder jar and grind to a fine paste.
  2. Add this paste to gram flour along with turmeric powder, salt, asafoetida, chaat masala and carom seeds. Add sufficient water gradually and whisk to a smooth and thick batter.
  3. To make each omelette, heat 1 tsp oil in a non-stick pan and rotate it so that oil coats the entire pan. Pour a ladle of batter and spread evenly.
  4. Grate cottage cheese and cheese into another bowl.
  5. Flip the omelette and let the other side cook. Place some cottage cheese and cheese mixture in the center of the omelette. Sprinkle a little salt and fold into half. Cook turning sides till both sides are lightly golden. Similarly make more omelettes.
  6. Place the omelette on a serving plate and serve hot with a sauce of your choice.
