Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Besan Omelette Recipe

  • Gram flour (besan) 1 1/2 cups

  • Garlic 6 cloves

  • Ginger 1/2 inch

  • Green chillies 2

  • Cumin seeds , roasted 1/2 teaspoon

  • Fresh mint leaves a few

  • Fresh coriander leaves a few

  • Turmeric powder 1/2 teaspoon

  • Salt to taste

  • Asafoetida a pinch

  • Chaat masala 1 teaspoon

  • Carom seeds (ajwain) 1/4 teaspoon

  • Oil to cook

  • Cottage cheese (paneer) 100 grams

  • Processed cheese 100 grams


Step 1

Take gram flour in a bowl. Put garlic, ginger, green chillies, roasted cumin seeds, mint leaves, coriander leaves and a little water in a grinder jar and grind to a fine paste.

Step 2

Add this paste to gram flour along with turmeric powder, salt, asafoetida, chaat masala and carom seeds. Add sufficient water gradually and whisk to a smooth and thick batter.

Step 3

To make each omelette, heat 1 tsp oil in a non-stick pan and rotate it so that oil coats the entire pan. Pour a ladle of batter and spread evenly.

Step 4

Grate cottage cheese and cheese into another bowl.

Step 5

Flip the omelette and let the other side cook. Place some cottage cheese and cheese mixture in the center of the omelette. Sprinkle a little salt and fold into half. Cook turning sides till both sides are lightly golden. Similarly make more omelettes.

Step 6

Place the omelette on a serving plate and serve hot with a sauce of your choice.
