Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Baked Methi Bites-SK Khazana Recipe

  • Fresh fenugreek leaves (methi) chopped 1 cup

  • Semolina (rawa/suji) 1 cup

  • Gram flour (besan) 3/4 cup

  • Baking soda 1 teaspoon

  • Salt to taste

  • Red chilli powder 3/4 teaspoon

  • Turmeric powder 14 teaspoon

  • Green chillies finely chopped 2

  • Ginger-garlic paste 1 teaspoon

  • Garlic finely chopped 1/3 tablespoon

  • Small onion finely chopped 1

  • Oil 3 tablespo for greasing

  • Milk as required


Step 1

Preheat oven to 180˚C.

Step 2

Sieve semolina into a bowl. Add gram flour, baking soda, salt, chilli powder, turmeric powder, green chillies, ginger-garlic paste, garlic, onion, fenugreek leaves and oil and mix well. Add milk and mix into a thick batter.

Step 3

Grease a barfi tray with some oil and spread the mixture evenly in it. Tap the tray lightly on the worktop to settle the batter evenly.

Step 4

Put the tray in the preheated oven and bake for 15-20 minutes. Remove from heat, cool and demould.

Step 5

Cut into squares and serve.
