Hindi: baingan
Also called by names like aubergine and eggplant, this purple hued fleshy vegetable is a versatile thing and fun to cook with. Dish-up a very traditional bharta with it, bake a lasagna with parmesan and eggplant or just fry it for a great accompaniment with dal-chawal, brinjal is versatile. To choose one without seeds, pick the lighter one with a smooth shiny skin.

Ingredients for Baingan Bharta Rolls Recipe

  • Brinjals 2 large

  • Hung yogurt 1 cup

  • Turmeric powder 1/4 teaspo a pinch

  • Ginger-garlic paste 2 tablespoons

  • Red chilli powder 1/2 teaspoon

  • Juice of 1 lemon

  • Onion finely chopped 1 medium

  • Green chillies finely chopped 2

  • Dill leaves (suva) finely chopped 3 tablespo for garnish

  • Peanuts crushed 3 tablespoons

  • Salt to taste

  • Oil 5 tablespoons

  • Garlic finely chopped 2 tablespoons

  • Asafoetida a pinch

  • Cumin seeds 1 teaspoon


Step 1

Apply 1 tsp oil on one brinjal and roast it on direct heat. Refresh in cold water and peel. Cut the other brinjal into thin slices and dip them into water with a pinch of turmeric powder.

Step 2

To prepare a marinade, mix together ginger-garlic paste, red chilli powder, remaining turmeric powder, lemon juice, 2 tbsps oil. Spread this marinade on all the brinjal slices.

Step 3

Remove the stem of the roasted brinjal, peel and finely chop the flesh and put into a bowl.Add onion, green chillies, dill leaves, crushed peanuts, 1 tbsp oil, salt and mix well.

Step 4

Heat 2 tbsps oil in a non stick pan. Add the marinated brinjal slices, cover the pan and grill, flipping sides, till evenly golden.

Step 5

Transfer yogurt into a bowl. Add garlic, salt and mix well.Heat 2 tsps oil in a non stick pan. Add asafoetida, cumin seeds and sauté till fragrant.

Step 6

Add this tempering to the yogurt and mix. Spread the bharta on the grilled brinjal slices. Roll the slices and transfer onto a serving plate.

Step 7

Spread the yogurt over the slices. Garnish with dill leaves and serve.
