History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for BUN TIKKI - skk Recipe

  • Brown burger buns 8

  • Potatoes boiled, peeled and grated 1 cup

  • Red chilli powder 1/2 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Dried mango powder 1/2 teaspoon

  • Fresh coriander leaves chopped 1 tablespoon

  • Green chillies finely chopped 1/2 teaspoon

  • Dried pomegranate seeds roasted and crushed 1 teaspoon

  • Salt to taste

  • Refined flour 2 tablespoons

  • Oil for greasi to shallow fry

  • Butter as required

  • Green chutney as required

  • Tomato slices 4

  • Onion slices 4

Method

Step 1

Take potatoes on a mixing bowl, add chilli powder, turmeric powder, dried mango powder, coriander leaves, green chillies, crushed pomegranate seeds, salt and refined flour and mix well.

Step 2

Grease your palms with some oil, divide the mixture into equal portions and shape them into tikkis.

Step 3

Heat some butter in a non-stick pan. Slit the buns horizontally and cook till lightly browned. Remove from heat and set aside.

Step 4

Heat some oil in the same pan. Place the tikkis in it and shallow-fry, turning sides, till evenly cooked and golden brown on both sides.

Step 5

Apply some butter and some green chutney on all the bun halves. . Place a tomato slice on each base half. Top with a tikki and an onion slice and cover with the top halves. Secure with a toothpick.

Step 6

Arrange the bun tikkis on a serving platter and serve immediately with tomato ketchup and potato wafers.
