Aloo Wadiyan

Ingredients 

  • 3 medium potatoes, peeled
  • 5-6 urad dal wadis
  • 4 tablespoons oil
  • 1 teaspoon finely chopped ginger 
  • 1 large onion, finely chopped
  • 1 cup fresh tomato puree
  • 1 teaspoon red chilli powder
  • 1 tablespoon coriander powder
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon garam masala powder
  • Salt to taste
  • 3 tablespoons chopped fresh coriander leaves 
  • Fresh coriander sprigs for garnish

Method

  1. Cut the potatoes in wedges and set aside. Lightly crush the wadis in a mortar and pestle.
  2. Heat oil in a pressure cooker, add the wadis and saute till golden brown. Drain on absorbent paper.
  3. Add ginger to the oil remaining in the cooker and saute for a few seconds.
  4. Add onion, mix well and saute till golden brown. Add tomato puree, mix well and saute for 3-4 minutes or till oil separates.
  5. Add red chilli powder, coriander powder, turmeric powder and garam masala powder, mix well and saute for 1 minute.
  6. Add ½ cup water and mix. Add potato wedges, fried wadis, salt and coriander leaves and mix well.
  7. Add ½ cup water, mix well, cover the cooker and cook under pressure till 3-4 whistles are released.
  8. Open the lid of the cooker once the pressure reduces completely.
  9. Transfer into a serving bowl, garnish with coriander sprig and serve hot.
