Ingredients
- 3 medium potatoes, peeled
- 5-6 urad dal wadis
- 4 tablespoons oil
- 1 teaspoon finely chopped ginger
- 1 large onion, finely chopped
- 1 cup fresh tomato puree
- 1 teaspoon red chilli powder
- 1 tablespoon coriander powder
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon garam masala powder
- Salt to taste
- 3 tablespoons chopped fresh coriander leaves
- Fresh coriander sprigs for garnish
Method
- Cut the potatoes in wedges and set aside. Lightly crush the wadis in a mortar and pestle.
- Heat oil in a pressure cooker, add the wadis and saute till golden brown. Drain on absorbent paper.
- Add ginger to the oil remaining in the cooker and saute for a few seconds.
- Add onion, mix well and saute till golden brown. Add tomato puree, mix well and saute for 3-4 minutes or till oil separates.
- Add red chilli powder, coriander powder, turmeric powder and garam masala powder, mix well and saute for 1 minute.
- Add ½ cup water and mix. Add potato wedges, fried wadis, salt and coriander leaves and mix well.
- Add ½ cup water, mix well, cover the cooker and cook under pressure till 3-4 whistles are released.
- Open the lid of the cooker once the pressure reduces completely.
- Transfer into a serving bowl, garnish with coriander sprig and serve hot.
