Ingredients
- 2 medium potatoes, peeled
- 200 grams cluster beans (gavar)
- 1 teaspoon cumin powder
- 1 teaspoon red chilli powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 medium onion, chopped
- 2 tablespoons oil
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon asafoetida
- Salt to taste
- 1/2 teaspoon chopped jaggery
- 2 tablespoons scraped fresh coconut + to garnish
Method
- Cut potatoes into medium sized cubes. Put them in a bowl of water and keep aside.
- Trim both the ends of the cluster beans, break them into 1 inch pieces and put into another bowl.
- Add cumin powder, red chilli powder, turmeric powder, coriander powder, onions and potatoes.
- Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add cumin seeds and asafoetida. Once the cumin seeds begin to change colour add the vegetable mixture and mix well.
- Add salt and jaggery and sauté for a minute. Add ½ cup water and mix well. Cover and cook for 8-10 minutes or till the potatoes are soft.
- Add 2 tbsps coconut and mix.
- Transfer into a serving bowl. Garnish with remaining coconut and serve hot.
