Aloo Gavar Sabzi

Potatoes and cluster beans cooked together with basic Indian spices to make a delicious dish. Serve this with hot chapatis. This is a Sanjeev Kapoor exclusive recipe.

Aloo Gavar Sabzi

Ingredients 

  • 2 medium potatoes, peeled
  • 200 grams cluster beans (gavar)
  • 1 teaspoon cumin powder
  • 1 teaspoon red chilli powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 medium onion, chopped
  • 2 tablespoons oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon asafoetida
  • Salt to taste
  • 1/2 teaspoon chopped jaggery 
  • 2 tablespoons scraped fresh coconut + to garnish 

Method

  1. Cut potatoes into medium sized cubes. Put them in a bowl of water and keep aside.
  2. Trim both the ends of the cluster beans, break them into 1 inch pieces and put into another bowl.
  3. Add cumin powder, red chilli powder, turmeric powder, coriander powder, onions and potatoes.
  4. Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add cumin seeds and asafoetida. Once the cumin seeds begin to change colour add the vegetable mixture and mix well.
  5. Add salt and jaggery and sauté for a minute. Add ½ cup water and mix well. Cover and cook for 8-10 minutes or till the potatoes are soft.
  6. Add 2 tbsps coconut and mix.
  7. Transfer into a serving bowl. Garnish with remaining coconut and serve hot.
