Veggie Fingers

Mixed vegetable mixture shaped into fingers, dipped in refined flour batter, rolled in breadcrumbs and deep fried. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Veggie Fingers

  • ½ cup Cauliflower grated
  • ¼ cup Carrots grated
  • 1 tablespoon Fresh coriander leaves chopped
  • 1 medium Onion finely chopped
  • 2 medium Potatoes boiled, peeled and grated
  • ½ teaspoon Garam masala powder
  • 1 teaspoon Red chilli powder
  • to taste Salt
  • ¼ cup Mozzarella cheese grated
  • as required Fresh bread crumbs
  • 2-3 tablespoons Refined flour (maida)
  • for deep-frying Oil
  • as required Tomato ketchup

Method

  1. Take cauliflower, carrot, coriander leaves, onion, potatoes, garam masala powder, chilli powder, salt and mozzarella cheese in a bowl and mix well.
  2. Divide the mixture into equal portions and shape them into 2 inch thick rolls.
  3. Spread some breadcrumbs on a plate and coat each roll with it.
  4. Take flour and some water in another bowl and whisk well to make a smooth batter.
  5. Spread some breadcrumbs on the worktop. Dip the prepared rolls in the batter and roll them in the breadcrumbs on the worktop. Transfer onto a plate and freeze for 15-20 minutes.
  6. Heat sufficient oil in a pan.
  7. Deep-fry rolls in hot oil till golden and crisp. Drain on absorbent paper.
  8. Put some tomato ketchup in individual shot glasses, place one fried roll in each glass and serve hot.
