Relish a salad platter of thinly sliced tomatoes, with chunks of mozzarella, a drizzle of olive oil, sliced black olives and basil leaves. Arrange in concentric circles on a nice white plate. The word relish is just perfect here. And not just salads, for all those rich and good-looking Indian preps, the very famous onion-tomato masala is a must! Then, there are soups, beverages (call for the Bloody Mary!), snacks and even desserts made of these plump red things. Even the green ones are in use today. Must say, terrific tomatoes!

Ingredients for Tomato Corn Capsicum Bhurji Recipe

  • Tomatoes finely chopped 3 large

  • Corn kernels boiled 1 cup

  • Green capsicum finely chopped 1/2 small

  • Milk 1/2 cup

  • Oil 1 tablespoon

  • Cumin seeds 1 teaspoon

  • Ginger finely chopped 1 tablespoon

  • Green chillies finely chopped 2

  • Red chilli powder 1 tablespoon

  • Turmeric powder 1/4 teaspoon

  • Dried mango powder (amchur) 1 teaspoon

  • Cottage cheese (paneer) 100 grams

  • Salt to taste

  • Bhuna masala 50 grams

  • Juice of ½ lemon

  • Fresh coriander leaves finely chopped 2 tbsps + for garnishing

  • White bread slices toasted for serving 8


Step 1

Grind together corn kernels and milk.

Step 2

Heat oil in a non-stick pan, add cumin seeds, ginger and green chillies and sauté till fragrant.

Step 3

Add tomatoes, red chilli powder, turmeric powder, amchur and mix.

Step 4

Add green capsicum, ground corn and mix. Crumble paneer and add to the pan.

Step 5

Add salt, bhuna masala, lemon juice, coriander leaves and mix well.

Step 6

Cut toasts into round slices with a round cookie cutter. Spread the bhurji on the toasts, arrange on a serving plate and serve.
