How to make Spinach Rice -

Treasure house of vitamins and minerals, spinach must be included in the week's menu. The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Cook time : 21-25 minutes

Ingredients for Spinach Rice Recipe

  • Spinach chopped 2 cups

  • Rice 3 tablespoons

  • Fennel seeds (saunf) 1 teaspoon

  • Black cardamom 2

  • Cinnamon 1 inch stick

  • Cloves 2

  • Onion sliced 1 medium

  • Carrot grated 1 medium

  • Red chilli powder 1/4 teaspoon

  • Basmati rice soaked 1 cup

  • Salt to taste

  • Lemon juice 1 teaspoon


Step 1

In a microwave bowl add ghee, saunf, black cardamoms, cinnamons and cloves. Cook on high uncovered for two minutes. Mix well.

Step 2

Add onions and micro on high uncovered for two min. Add spinach, carrots and red chilli powder and micro for two minutes.

Step 3

Add rice, salt and two cups of water. Mix gently. Micro on high uncovered for eight minutes. And then cover & cook for two minute.

Step 4

Add lemon juice and stir it and micro on medium for two minutes. Serve hot with raita or pickle.
