Spicy Pumpkin With Coconut

Ingredients 

  • 500 grams pumpkin
  • 3 medium onions, sliced
  • 4 tablespoons oil
  • 1 tablespoon crushed garlic 
  • 3 fresh red chillies, chopped
  • Salt to taste
  • 1 teaspoon crushed black peppercorns 
  • 1/2 teaspoon cinnamon powder
  • 1/4 cup desiccated coconut
  • 3 medium tomatoes, chopped

Method

  1. Peel and cut the pumpkin into medium sized pieces. Heat oil in a pan, add sliced onion and saute on high heat. Add pumpkin pieces and saute for a few minutes.
  2. Add crushed garlic and saute. Add fresh red chillies, salt and crushed black pepper and mix. Add cinnamon powder, desiccated coconut, chopped tomatoes and water. Cover and cook for 20-25 minutes till done. Serve hot.
