Ingredients list for Spicy Chicken Stuffed Squash

  • 250 grams Boneless chicken breasts
  • 2 Green chillies finely chopped
  • to taste Crushed black peppercorns
  • 1 teaspoon Red chilli flakes
  • 1 medium Squash
  • 1 teaspoon Oil ½ tablespoon +
  • 1 medium Onion finely chopped
  • 1 tablespoon Garlic chopped
  • to taste Salt
  • ½ teaspoon Dried mixed herbs
  • 3 Fresh thyme sprigs
  • 1 Egg

Method

  1. Preheat oven to180ºC.
  2. Heat ½ tablespoon oil in a non-stick pan. Add onion and sauté till it turns translucent. Add garlic, stir and sauté till lightly browned.
  3. Cut chicken into small cubes.
  4. Add green chillies to the pan and toss. Add chicken cubes, toss and cook for 2-3 minutes.
  5. Cut off a thin slice from the top part of the squash and reserve it to make the cover.
  6. Add salt, crushed peppercorns, chilli flakes, herbs and thyme leaves to the pan, toss x and cook till fully done.
  7. Scoop out the seeds and a little flesh of the squash to make a hollow. Sprinkle salt and crushed peppercorns in it and drizzle 1 teaspoon oil. Rub the seasoning inside, outside the squash.
  8. Add egg to the pan, mix well and let the egg cook completely.
  9. Stuff the squash with the chicken - egg mixture and press lightly. Cover the stuffed squash with the cut off slice, place it on a baking tray and bake in the preheated oven for 15-20 minutes.
  10. Serve hot.
