With the recognition of being an important commercial pulse of the world, soya beans are coming into many kitchens around the world. Soya beans are said to control blood sugar levels, lower cholesterol, regulate the bowels and relieve constipation. Besides the popular tofu or beancurd, the beans are also fermented and used to make flavouring pastes and condiments, notably the Japanese soy sauce or shoyu and miso and the Indonesian tempeh.

Ingredients for Soya ki Galouti Recipe

  • Soya granules soaked in warm water for 30-45 minutes 2 cups

  • Gram flour (besan) 3 tablespoons

  • Ginger paste 1 tablespoon

  • Garlic paste ½ tablespoon

  • Ghee 3 tablespoons + to shallow fry

  • Garam masala powder 2 teaspoons

  • Red chilli powder 1 teaspoon

  • Mace powder ½ teaspoon

  • Green cardamom powder 1 teaspoon

  • Salt to taste

  • Browned onion paste ½ cup

  • saffron strands soaked in water a few

  • Kewra water 1 teaspoon

  • Onion rings Curd to serve

Method

Step 1

Place soya granules in a strainer and drain excess water. Transfer into a bowl.

Step 2

Mix ginger paste, garlic paste and 3-4 tablespoons water in a small bowl and mix well.

Step 3

Heat 3 tablespoons ghee in a non-stick pan. Add ginger-garlic paste and sauté on low heat for 2-3 minutes. Add gram flour and sauté till fragrant.

Step 4

Add drained soya granules and sauté for 4-5 minutes. Add garam masala powder, red chilli powder, mace powder, green cardamom powder and salt and mix well. Cook for 4-5 minutes.

Step 5

Transfer soya mixture on a plate and allow to cool.

Step 6

Grind the soya mixture along with browned onion paste to a smooth paste and transfer into another bowl. Add saffron and kewra water and mix well.

Step 7

Divide the mixture into 8 equal portions and shape into tikkis.

Step 8

Serve hot garnished with curd onion rings.
