Ingredients for Piquant Potatoes In Jackets Recipe

  • Potatoes 4 large

  • Onions

  • Oil 1 tablespoon

  • Cumin seeds 1 teaspoon

  • Onion chopped 1 small

  • Ginger chopped 1 inch piece

  • Garlic chopped 3-4 cloves

  • Turmeric powder 1/2 teaspoon

  • Coriander powder 2 teaspoons

  • Black pepper powder 1/2 teaspoon

  • Yogurt 8 tablespoons

  • Fresh coriander leaves chopped 1 tablespoon


Step 1

Preheat oven to 190°C. Wash and prick potatoes with a fork. Bake in a preheated oven at 190°C for forty minutes or till done.

Step 2

Cut potatoes in half and scoop out flesh without spoiling the skin. Skin of the potato is popularly known as the jacket. Heat oil in a pan.

Step 3

Add cumin seeds, onion, ginger and garlic. Sauté for a minute. Add scooped potatoes, turmeric powder, coriander powder, black pepper powder and garlic salt. Cook further on medium heat for two minutes, stirring occasionally.

Step 4

Adjust seasoning. Spoon mixture back into potato jackets and top each with a tablespoonful of yogurt. Garnish with coriander leaves and serve hot.
