How to make Palak Sprouts -

Treasure house of vitamins and minerals, spinach must be included in the week's menu. The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Palak Sprouts Recipe

  • Spinach blanched 1 medium bunch

  • Mixed Sprouts 1 cup

  • Oil 3 tablespoons

  • Medium onion finely chopped 1

  • Garlic finely chopped 1 tablespoon

  • Medium tomatoes finely chopped 2

  • Salt to taste

  • Garam masala powder 1 teaspoon

  • Fresh cream 1/4 cup

  • Ginger-garlic paste 1 tablespoon

  • Turmeric powder 1/4 teaspoon

  • Chana masala powder 1 tablespoon

  • Red chilli powder 1 teaspoon

  • Ginger 1/2 inch

  • Lemon juice 3/4 tablespoon

Method

Step 1

Heat 2 tbsps oil in a deep non-stick wok and 1 tbsp oil in a non-stick pan.

Step 2

Roughly chop onion and add to the pan and sauté well.

Step 3

Add garlic to the wok and sauté till golden.

Step 4

Place spinach leaves in a grinder jar and grind to a coarse paste. Add this paste to the garlic in the wok. Add ¼ cup water and mix well.

Step 5

When the onion in the pan becomes soft, add tomato and mix well.

Step 6

Add salt and garam masala powder to the spinach and mix well and saute for 2 minutes. Add cream and mix well

Step 7

Add ginger-garlic paste and mixed sprouts to onion-tomato mixture. Add ½ cup water, salt, turmeric powder, chana masala powder and red chilli powder and mix well. Cover and cook till the sprouts are done.

Step 8

Cut ginger into strips and place in a bowl. Add salt and lemon juice mix well.

Step 9

Make a bed of spinach mixture in a serving bowl, top with cooked sprouts, garnish with ginger strips and pour the lemon juice over the sprouts. Serve immediately.
