Ingredients list for Palak Khichdi

  • 1 cup Spinach Puree
  • 3 cups Leftover Rice
  • 1 teaspoon Oil
  • ¼ teaspoon Cumin seeds
  • 1 medium Onion finely chopped
  • 1 teaspoon Garlic cloves finely chopped
  • 2-3 tablespoons Boiled mixed sprouts
  • 1 Green chilli finely chopped
  • ¼ teaspoon Garam masala powder
  • ½ teaspoon Red chilli powder
  • 1 teaspoon Butter
  • to taste Salt
  • ½ cup Milk

Method

  1. Heat oil in a non-stick pan, add cumin seeds, onion and garlic. Mix and sauté till onion turns light brown.
  2. Add sprouts, green chilli, garam masala powder and red chilli powder and mix well.
  3. Add spinach puree, mix well and cook for 2-3 minutes.
  4. Add butter, salt and milk, mix well and cook for 2 minutes.
  5. Add rice, mix well and cook for a minute.
  6. Transfer into a serving bowl and serve hot.
