Ingredients
- 200 grams noodles, boiled
- 1 tablespoon oil
- 2 spring onions, sliced
- 1 small yellow capsicum, sliced
- 1 small red capsicum,sliced
- 4-5 French beans, sliced diagonally and blanched
- ½ cup sweet corn kernels, boiled
- 2 teaspoons soy sauce
- Salt to taste
- 2 tablespoons hot and sweet tomato ketchup
- 1 tablespoon sweet chilli sauce
- ¼ cup bean sprouts
- 2 stalks spring onion greens, sliced
Method
- Heat the oil in a non stock pan; add the spring onions and stir-fry for 1-2 minutes. Add the capsicums and French beans and stir-fry for a few minutes.
- Add the sweet corn and soy sauce and mix well. Add the noodles and salt and toss to mix.
- Add the hot and sweet tomato ketchup and sweet chilli sauce. Toss till well combined.
- Add the bean sprouts and spring onion greens and mix well. Serve hot.
