Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Moroccan Chicken Recipe

  • Chicken cut into 8 pieces 600 grams

  • Chickpeas soaked and boiled 1/2 cup

  • Olive oil 3 tablespoons

  • Butter 1 tablespoon

  • Onions 2 medium

  • Ginger 1 inch piece

  • Garlic crushed 6-8 cloves

  • Carrots 1/2 inch cubes 3 medium

  • Coriander powder 1/2 teaspoon

  • Cumin powder 1/2 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Salt to taste

  • Lemon rind grated 2 teaspoons

  • Dried apricots chopped 75 grams

  • Zucchini 1/2 inch pieces 1 large

  • Red capsicum seeded and sliced 1 large

  • Tomatoes seeded and chopped 2 medium

  • Saffron (kesar) a few strands

Method

Step 1

Clean cut the chicken and all vegetables.

Step 2

Heat olive oil in a pan. Add a little butter. Add onions, ginger and garlic and sauté for two minutes. Add chicken and sauté on high heat for two to three minutes.

Step 3

Add carrots and mix. Add coriander powder, cumin powder, red chilli powder, salt and grated lemon rind and mix. Add one cup of water, cover and cook for three to four minutes. Add apricots and mix.

Step 4

Cover and continue to cook for a minute. Add zucchini, red capsicum and mix. Cover and cook. When the chicken is almost done add tomatoes, saffron and mix.

Step 5

Cover and cook till done. Add boiled chickpeas and mix. Cover and cook for two to three minutes. Adjust salt and stir.

Step 6

Serve hot with couscous or with rice.
