Favourite seafood? Prawns, prawns and more of prawns. A wide variety of small crustaceans, tiny relatives of the lobster, are known as prawns. Prawns are normally translucent when raw but get their distinctive pink or red colour on being cooked. one word of caution – if buying unpeeled prawns, smell for freshness and look for bright, shiny shells that have some spring left in them.

Ingredients for Malabar Prawns-SK Khazana Recipe

  • Tiger prawns 8-12

  • Salt to taste

  • Lemon juice 1 tablespoon

  • Red chilli powder 1 teaspoon

  • Oil 2 tablespoons

  • Medium white onion sliced 1

  • Ginger cut into strips 1/2 inch

  • Green chillies seeded and cut into strips 2

  • Fresh turmeric cut into strips 1/2 inch

  • Curry leaves 8-10

  • Fresh coconut scraped for garnish

  • Fresh coriander sprig for garnish

Method

Step 1

Put prawns in a bowl. Add salt, lemon juice and chilli powder, mix well and set aside to marinate for 10-15 minutes.

Step 2

Heat oil in a non-stick pan. Add onion and sauté till translucent. Add ginger, green chillies and fresh turmeric, mix and sauté for 2-3 minutes.

Step 3

Add curry leaves and mix well. Add prawns, mix and cook for 5-7 minutes.

Step 4

Garnish with coconut and a sprig of fresh coriander and serve hot.
