Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Cook time : 21-25 minutes

Ingredients for Malabar Chicken Curry Recipe

  • Chicken cut into small pieces 1 kilogram

  • Coconut oil 2 tablespoons

  • Coriander seeds 2 tablespoons

  • Dry red chilies 3

  • Black peppercorns 1 tablespoon

  • Cumin seeds 1 teaspoon

  • Mustard seeds 1 teaspoon

  • Fenugreek seeds (methi dana) 1 teaspoon

  • Cinnamon 2 inch piece

  • Coconut grated 1 cup

  • Ginger-garlic paste 1 tablespoon

  • Green chilli 2

  • Curry leaves 10

  • Onion sliced 3 medium

  • Turmeric powder 1 teaspoon

  • Salt to taste

  • Fresh coriander leaves chopped 1/2 cup

Method

Step 1

Heat one tablespoon oil a non stick pan and addcoriander seeds, dry red chillies, black peppercorns, cumin seeds, mustard seeds, fenugreek seeds, cinnamon stick and coconut till fragrant.

Step 2

Remove from flame and grind to a coarse paste adding sufficient quantity water.

Step 3

Heat oil in a non stick pan add ginger garlic paste, green chillies, curry leaves and saute for a minute.

Step 4

Add onions and saute till light brown.

Step 5

Add chicken pieces, turmeric powder, salt and grounded paste and ½ cup water and saute for a minute and let it cook till chicken is tender.

Step 6

Serve hot garnish with chopped coriander leaves.
