Peruvian cuisine has been largely influenced by the indigenous population including the Inca, and other immigrants from Europe (Spain, Italy and Germany), Asia (China and Japan) and West Africa. Without the familiar ingredients from their home countries, immigrants modified their traditional cuisines by using ingredients available in Peru.
The primary ingredients found in nearly every Peruvian dish are rice, potatoes, chicken, pork, lamb and fish. Most of these meals include one of the different kinds of "aji", or Peruvian hot pepper, which mainly are: yellow aji pepper, red aji pepper, red rocoto pepper.

Chicken, pork and lamb were introduced to Peru 500 years ago, when Spaniards came to America. Other ingredients, like potatoes, were already grown in the Peruvian Andes and were taken by the Spaniards back to Europe. Today more than 200 varieties of potato can be found in the Lake Titicaca area. They range in colour from purple to blue, from yellow to brown. Sizes and textures vary as well. Some are smalls as nuts; others can be as large as oranges.

Ingredients for Lima Chicken Recipe

  • Chicken on Bone cut into 8 pieces on the bone 750 grams

  • Potatoes 2 medium

  • Garlic crushed 1 tablespoon

  • Lemon juice 2 tablespoon

  • Lemon 1

  • Green chillies 2

  • Fresh red chillies 2

  • Pickled jalapeno 5-6

  • Oil 1 tablespoon

  • Onions 2 medium

  • Fresh oregano sprigs 4-5

  • Fresh coriander sprigs 3-4

  • Fresh mint sprigs 6-7

  • Salt to taste

  • Crushed black peppercorns to taste

  • Cumin powder 1 teaspoon

  • Chicken stock 2-3 cups


Step 1

Combine garlic and lemon juice in a bowl. Grate rind of a lemon in a bowl.

Step 2

Roughly chop green, red chillies and jalapenos and add.

Step 3

Add chicken pieces and mix well. Roughly tear fresh oregano leaves and add. Roughly chop coriander and mint sprigs and add. Add salt and crushed peppercorns and mix well. Keep aside to marinate for 1-2 hours.

Step 4

Heat oil in a non-stick pan.

Step 5

Roughly dice onions and potatoes and add to the pan and mix. Cover and cook till the potatoes are half done.

Step 6

Open the lid and add cumin powder and mix well. Add marinated chicken pieces and chicken stock and mix well. Adjust salt and mix well. Cover and cook till the chicken and potatoes are done.

Step 7

Transfer in a serving bowl and serve immediately.
