Ingredients list for Leftover Roti Rice Rolls
- 4 leftover rotis
- 1 cup Rice boiled
- 1 tbsp + f Oil
- 1 teaspoon Cumin seeds
- 8-10 Cauliflower florets
- 1/2 cup Green peas
- 1 medium Potato boiled, peeled and cut into cubes
- 1/2 teaspoon Red chilli powder
- 1 tablespoon Garam masala powder
- to taste Salt
- 1 1/2-2 tablespoons Green chutney
- 2 tablespoons Red chilli sauce
- Juice of ½ lemon
- 1 medium Green capsicum chopped
Method
- Heat 1 tbsp oil in a non-stick pan. Add cumin seeds and sauté till fragrant. Add cauliflower florets, mix well and cook till done.
- Add green peas, potato, chilli powder, garam masala powder and salt, mix well and cook for a minute.
- Add green chutney, red chilli sauce and rice and mix well. Add lemon juice and capsicum, mix and cook for a minute. Remove from heat and set aside.
- Place rotis on the worktop. Place a portion of the prepared rice mixture in the centre and roll tightly.
- Heat a non-stick pan. Place the prepared rotis on it, drizzle some oil on top and roast till golden from both sides.
- Cut the roasted rolls and place them on a serving plate. Serve hot garnished with bell pepper curls, carrot strips and micro greens.
