Ingredients list for Lamb Burger with Caramelized Onion
- 400 grams Lamb mince
 - 4 Burger buns
 - 1 tablespoon brown sugar/jaggery
 - 1 medium Onion
 - 1 tablespoon Garlic chopped
 - 2 teaspoons Worcestershire sauce
 - 2 teaspoons Mustard paste
 - to taste Salt
 - to taste Crushed black peppercorns
 - 1 Egg
 - 4-5 Fresh thyme sprigs
 - for shallow frying Oil for grilling and
 - 2 medium Tomato
 - ½ cup Mayonnaise
 - ½ cup Cheddar cheese grated
 - 2 tablespoons Tomato ketchup
 - 3-4 Iceberg lettuce
 
Method
- Roughly chop onion, reserve some of it and add remaining in a bowl. Add lamb mince, garlic, Worcestershire sauce, mustard paste, salt and crushed peppercorns and mix well. Add egg and mix well. Add thyme leaves and mix well.
 - Slice white onion and separate into rings.
 - Heat some oil in a non-stick grill pan. Add white onion rings and grill.
 - Cut tomato into slices, place them in the grill pan and grill till evenly done from all sides. Remove the tomatoes from heat and set aside.
 - Slit burger buns horizontally into halves and toast them in the oven till crisp.
 - To make spread, combine reserved chopped onion, mayonnaise, tomato ketchup, crushed peppercorns and salt in a bowl and mix well.
 - Add brown sugar to white onion rings and grill till they become caramelized.
 - Heat some oil in another non-stick pan.
 - Divide the mince mixture into equal portions and shape them into large patties. Place them on the pan and shallow-fry in hot oil till golden from both sides and fully cooked.
 - Spread a portion of the spread on the lower half of the toasted bun. Put some torn lettuce, grilled tomatoes on top and place a fried patty on top. Top with cheese and place it in the oven on high temperature till the cheese gratinates.
 - Place the caramelized onions on top. Apply some spread on the lower part of the upper half of the toasted bun, cover with it and serve immediately.
