Ingredients list for Khada Pav Bhaji-SK Khazana

  • 1 Medium green capsicum cut into medium pieces
  • Medium red capscicum cut into medium pieces
  • 10-12 Cauliflower floretsq
  • 1 Small carrot chopped
  • 1/4 cup Green peas
  • 1 Medium potato peeled and cut into cubes
  • 1 1/2 tablespoons Pav bhaji masala
  • 4 tablespoons Butter
  • 1 Large onion finely chopped
  • 2 Green chillies finely chopped
  • 1 tablespoon Ginger-garlic paste
  • 1 cup Tomato puree
  • 2 tablespo for garnish Fresh coriander leaves finely chopped
  • 1 tablespoon Red chilli paste
  • 1/4 teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • to taste Salt
  • to serve Toasted pavs
  • to serve Onions chopped
  • to serve Lemon wedges

Method

  1. Heat 2 tablespoons butter in a non-stick pan. Add green and red capsicums and sauté till soft.
  2. Add cauliflower florets, carrot and green peas and toss well. Add potato and mix and saute. Add some water, mix and cook for 2-3 minutes or till potato is cooked. Remove from heat and set aside.
  3. Heat remaining butter in another non-stick pan. Add onion and sauté till translucent. Add green chillies and mix.
  4. Add ginger-garlic paste and mix. Add tomato puree and 1 tablespoon coriander leaves, mix well and cook for a minute.
  5. Add chilli paste and mix. Add 1½ tablespoons pav bhaji masala and mix well. Add turmeric powder, chilli powder and some water and mix well.
  6. Add salt and cooked vegetables and mix. Add 1 tablespoon coriander leaves, mix well and cook for 2-3 minutes.
  7. Garnish with some coriander leaves and serve hot with pavs, chopped onions and lemon wedges.
