History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Jaljeera - SK Khazana Recipe

  • Cumin seeds 2-3 tablespoons

  • Salt to taste

  • Asafoetida 1/4 teaspoon

  • Black salt to taste

  • Sugar 1 1/2 tablespoons

  • Ginger finely chopped 1 tablespoon

  • Fresh mint leaves 10-12

  • Fresh coriander leaves a few

  • Tamarind pulp 1 tablespoon

  • Lemons 3

  • Ice cubes as required

  • Drinking soda For topping

Method

Step 1

Dry roast cumin seeds till fragrant and crush coarsely in a mortar with a pestle.

Step 2

Add salt, asafoetida, black salt and sugar and crush. Add ginger, mint leaves, coriander leaves and tamarind pulp and crush again.

Step 3

Halve 2 lemons and cut 1 lemon into thin slices.

Step 4

Put some cumin seed mixture into each of 4 tall glasses. Squeeze in juice of ½ lemon into each glass. Add 2-3 lemon slices and some ice cubes.

Step 5

Top with drinking soda, stir and serve immediately.
