Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Jain Mysore Masala Dosa Recipe

  • Dosa batter 2 cups

  • Raw banana chopped 1 cup

  • Oil 1 tablespoon + as required

  • Mustard seeds 1 teaspoon

  • Curry leaves 6-8

  • Green chilli finely chopped 1

  • Green capsicum finely chopped 1/2 cup

  • Tomatoes chopped 1 cup

  • Salt to taste

  • Red chilli powder 1/2 teaspoon

  • Garam masala powder 1/2 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Sugar 1/2 teaspoon

  • Coconut chutney 2 tablespoons

  • Red chilli sauce 2 tablespoons

Method

Step 1

Heat 1 tablespoon oil in a non-stick pan, add mustard seeds and let them splutter. Add curry leaves, green chilli and capsicum and sauté.

Step 2

Add raw banana and tomatoes. Mix well, cover and cook for 5-8 minutes.

Step 3

Add salt, red chilli powder, garam masala powder and turmeric powder and mix well. Add sugar, coconut chutney and red chilli sauce and mix well.

Step 4

Mash the mixture with a masher, mix well sauté for a minute. Transfer into a bowl and set aside.

Step 5

To make dosa, heat a non-stick tawa and pour a ladleful of the dosa batter on it and spread into a thin dosa. Drizzle some oil on the sides and cook till dosa is half done.

Step 6

Spread a portion of the vegetable masala in the center and fold the sides into a triangle. Similarly make more dosas.

Step 7

Transfer into a serving plate and serve hot with chutney.
